I have naturally curly hair. It's thick and gorgeous, and I just love it when it's straight. But when I curl it with a curling iron, five minutes later it's back to straight. I can't keep curls, whatsoever. I've tried using hairspray, but it only made my hair sticky and frizzy. I've tried spritz, it just made my hair stiff and frizzy. Gel, will only make it frizzy and a giant mess for me to tackle.
In other words, water of any kind will make it frizz.
What can I use to maintain curls, but without looking like a troll doll?

When you have a good curler iron/straightener, you don't need products. Invest in a really nice curling iron.

alright,
here are some tips
Frizzy = damaged hair . probably from dryness or heat damage, so when yu use heat styleing tools such as :
hairdryer
flat iron
curling iron
.. you need to use either a leave in ( spritz in ) conditioner with heat protectant ( i would suggest Sunsilk therma shine leave in spray stuff, ) <- it works good, i use it. ... .. or some kind of SPRITZ in thermal protection stuff.
since your going for curly hair, use spriz products so you dont weigh down your curls.
try to use a curl boosting shampoo.. i wouldent suggest useing conditioner unless your straightening your hair.. because it will again, weigh down curls . ( i would suggest herbal essences totally twister shampoo.. i use it and i have straight hair, and it gives ME curls )
tips:
1. use a lightweight moouse, so it dosent weight down your precious curls, ( i would suggest herbal essences totally twisted curl boosting mousse, .. its very lightweight.. scrunch it in your hair )
2. use a frizz serum that SPRITZS, so it also dosent weigh down your curls. ( i think John Freida has products like this, in the Frizz-ease line )
3. use a fortifying NON-sticky hairspray, i would suggest any airisol hairspray, its lighter weight on your hair, ( also dont over do it, becuase it turns into a sticky mess ! )
also, if your hair is naturally curly, why would you use an iron ?

OH,
and if your going to straighten your hair,
use a very good moisturizeing shampoo and conditioner, so your hair is healthy, and less frizzy when you use it.
to get rid of your frizzies i would suggest useing Doves Dry/damaged hair line, for a weeek, then your hair will be gorgeous,
you could continue useing that for when your straighteneing your hair,
but i really like Herbal Essences Hello Hydration 2 in 1 shampoo and conditioner, it works well on my thick straight hair .

I don't like my curls, so I straighten it. But then when I use a curling iron while it's straight, I can't hold curls.

No. Ok, I like wearing my hair straight, but I just don't want it to be just plain blah. I need some type of movement. I try curling the ends, but by the time I'm out the door, it has already fallen.

You do need products, ESPECIALLY if you're going to heat it. After you wash out the heat, you'll see how much it damaged your hair. Make sure, if you're going to heat it, you get the right products.
Garnier Fructis has an anti-frizz serum you can apply to your hair. Its really cheap, you can find it in CVS and other places. They also have one for curls. Now, this isn't the best product out there, but it works well for me because its cheap.
There are also products to help moisture your hair after you heat it. Make sure you use that, or at least get a good conditioner.

You have naturally curly hair though! So you straighten it and then curl it? That sounds like a complete waste of time.
Just use a product in your hair to make the curls more maneagable.

if you want the ends to be curled just straighten some of you hair and leave parts curled.

But it wouldn't look right. You know Kerry Russell? Felicity? My hair is thicker than that, yet just as curly, and it's all the way down to my waist. It would be more beneficial for me in the mornings to have it straightened. Which I do every weds. It takes me about six hours to get it silky and straight.

My grandmother has some really good home potions for conditioner, and I use those. I also do a deep treatment every month. But doesn't serums make your hair sticky?
