hey what kind of food do you think you could make with brains, and for that matter what do you serve with it, white or red wine?

Hm. I think it would make an excellent pasta dish. The wine question is perplexing, though. It isn't really a meat, it is mostly fat...

I'm going to go with a nice white wine, since I'm putting it in a pasta dish.

OR

You could make a Gelato out of it, and serve it with a nice glass of Eiswein.

How about a turrine-ish thing with fried brains, lardons, stock and gelatine served with arich red like muga that is not too overpowering.
